Cashew Falafels

Ingredients
  1. 1/4 cup raw cashew nuts, processed
  2. 1/2 tin sweetcorn kernels or 3 cobs of corn (kernels removed)
  3. 1 tin organic chickpeas, drained
  4. 1/4 cup chopped fresh coriander
  5. 3 spring onions finely chopped
  6. 1 tsp ground cumin
  7. 1/2 tsp chilli flakes
  8. 1/2 tsp ground coriander
  9. 1 clove garlic, minced
  10. Sesame seeds
  11. Macadamia nut oil for frying
Method
  1. In a processor place: corn, chickpeas, spices, spring onions, garlic & process till forms a smooth texture.
  2. Add ground cashew nuts & fresh coriander & pulse to combine.
  3. Shape into patties. Dip in sesame seeds.
  4. Cook over a medium heat for about 4 mins or until golden brown.
  5. Serve with a fresh salad.
Notes
  1. Can add a touch of salsa for extra flavour!
  2. Add 2 tsp Sacha Inchi antioxidant powder (to wet mixture before shaping into patties) - to boost your antioxidant intake!
