Coconut & Cherry Chia Pudding

  1. 200ml unsweetened almond milk
  2. 2 Tbsp chia seeds
  3. 1 Tbsp desiccated coconut
  4. 1 Tbsp coconut yoghurt
  5. 1 tsp vanilla extract
  6. zest of 1 lemon
  7. dash of cinnamon
  8. 1/2 cup frozen pitted cherries (thawed) or fresh cherries, to serve
  1. Place all ingredients except cinnamon and cherries in a bowl.
  2. Mix well and leave to set in fridge overnight.
  3. When ready to serve, add thawed cherries and dash of cinnamon and a little more yoghurt, if desired.
