Mushroom & Quinoa Patties

Ingredients
  1. 2 cups cooked quinoa (cook in chicken stock)
  2. 2 eggs, beaten
  3. 2 cloves crushed garlic
  4. 2 cups chopped mushrooms
  5. 1 carrot, grated
  6. 4 spring onions, chopped
  7. 2 teasp Moroccan Spices
  8. 1/2 cup grated parmesan
  9. 2 Tbsp chopped coriander
  10. 1 cup panko breadcrumbs
Method
  1. Cook the quinoa in rice cooker until liquid goes (1 cup quinoa to 2 cups chicken stock).
  2. In a bowl, add all remaining ingredients & combine well.
  3. When quinoa is cooked, add to the bowl of combined ingredients & mix in well.
  4. Form into patties and cook in small amount of macadamia nut oil until golden brown.
  5. Drain on absorbent paper & serve with a fresh garden salad.
Notes
  1. Makes about 15-18 patties.
