Oat Pancakes

  1. 1 egg
  2. 1 cup cottage cheese
  3. 3/4 cup rolled oats
  4. Option: add 1 tablespoon vanilla protein powder to increase protein content
  5. dash cinnamon
  6. add 1/2 cup frozen blueberries to batter (before cooking), for a fruity flavour
  1. Blend together in blender until well combined & consistency of thick batter.
  2. Cook on hot frypan (sprayed with olive oil spray).
  1. Makes about 8-10 pikelets.
  2. This is an ideal pre or post workout recovery meal.
  3. Can be served with fresh fruit and yoghurt or smoked salmon & avocado.
