Protein Waffles

  1. 9 free range eggs
  2. 1/2 cup coconut oil, melted
  3. 1/2 cup coconut flour
  4. 1 tsp vanilla extract
  5. 1 tsp cinnamon
  6. 2 heaped scoops protein powder
  7. small pinch Himalayan salt
  1. Break eggs into a bowl and whisk.
  2. Add melted coconut oil, cinnamon, vanilla & salt.
  3. Add coconut flour & protein powder and mix well. This makes a thick batter. If too thin, add a bit more flour.
  4. Spoon into a waffle iron that has been lightly sprayed with oil.
  5. Cook until golden brown.
  6. Serve with fresh berries and a small drizzle of maple syrup for a treat!
